Being gluten-free is all the rage nowadays. Whether you are actually gluten intolerant (like me) or you just want to try out a new diet, being gluten-free can be hard at times. Too often people just pick up things at the grocery store that say "gluten-free" on them instead of trying to make sure they are getting a healthy, balanced gluten-free diet. I struggle with this problem myself (being that I am gluten-free) and wanted to share some of my favorite gluten-free recipes from blogs and websites.
1. Spring Quinoa Salad
Quinoa is a protein-packed, gluten-free grain that is not only healthy for you but incredibly delicious! This Spring Quinoa Salad features quinoa, asparagus, arugula and sausage. It is perfect for celebrating the upcoming season of Spring with a healthy, fresh dish!
Also, I wanted to include a link for how to perfectly cook the quinoa for your salad being that sometimes it's a tad tricky to get it perfect: http://www.thekitchn.com/how-to-cook-quinoa-63344
2. Sun-dried Tomato Pesto Pasta
The hardest thing for me to adapt to when I found out I was gluten-intolerant was the fact that I couldn't have pasta anymore. However, I soon found delicious recipes for pasta that taste JUST LIKE regular pasta. Here's one of my very favorites: http://simplygluten-free.com/blog/2012/12/gluten-free-creamy-sun-dried-tomato-pesto-pasta-recipe.html.
3. Peanut Butter Oatmeal Chocolate Chip Cookies
These cookies are DELICIOUS and don't taste weird like some gluten-free cookie recipes tend to.
4. Rocky Road Ice Cream
Not only is this ice cream gluten-free, but it's dairy-free as well and doesn't even require an ice cream machine! Although it's still a bit chilly outside I still wanted to share with you my all-time favorite gluten-free, dairy-free dessert recipe! There's no way you won't love this as much as I do.
5. Silver Dollar Pancakes
One of my all-time favorite breakfast foods is pancakes and I hated that I couldn't have them when I became gluten-free. However, this great blog gave me a wonderful recipe for gluten-free pancakes that taste just like regular ones do!
6. Thai Chicken Soup
I absolutely LOVE Thai food and this soup hits just the right spot! You can always take out the chicken and it still tastes delicious. Try it--you won't regret it!
